Nana's Chicken Soup

Drift back to warm memories of childhood: cold winter afternoons spent watching Nana prepare her "famous" chicken soup. Our stomachs rumble as its mouth-watering aroma fills the house. We eagerly await our duty as taster. At last, Nana motions. We walk toward the stove and climb the step stool, ready to make the big decision … We can't bring you exactly your grandparents' soup … everyone's is, after all, their own, but we can bring you our version of a family favorite. Nana's Chicken Soup blends chicken, arborio rice, spinach, cannellini beans, and a hint of garlic to bring back comforting memories with each healthy spoonful.

Nana's Chicken Nutrition Facts

Arborio Rice.

Arborio rice is an Italian short-grain rice named after the town of Arborio in northern Italy where it was originally grown. Arborio rice is known for its rounded shape and when cooked its chewy and creamy texture; the exact reason why traditional risotto dishes are prepared with this unique rice.

Why Spinach and Popeye?

Popeye's creator, E.C. Segar, was a vegetarian. E.C. Segar wanted to make sure everyone knew the benefits of eating veggies. The one sure way he helped promote the love of vegetables was to make his popular character love spinach. "Popeye" was shown to develop amazing strength after ingesting the green leafy vegetable. It rapidly gained popularity during the 1920's when nutritionists found spinach to be rich in numerous vitamins and minerals. Or maybe it was because of the beloved "Popeye", who first debuted on January 17, 1929 in a comic strip called Thimble Theatre.

Cannellini Beans.

The nutty-flavored, white Cannellini bean looks like a kidney bean in size and shape. Catherine de Medici, daughter of the wealthy Medici family from Tuscany, was sent to France in 1533 at age 14 to marry the future King of France. It is said (mostly by Italians) that Catherine, along with the chefs she brought from Tuscany, greatly influenced French cuisine bringing these very same cannellini beans to the French court, which then inspired the creation of the classic French dish: cassoulet.
